Virtually any fish can be used in this dish, but Wil prefers strongly flavored fish like tuna or kingfish. Serve this as a fancy appetizer. <\/span><\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li>1\u00bd teaspoons <em>sambal oelek<\/em> (Asian chile paste)<\/li>\n<li>3 teaspoons chopped fresh ginger<\/li>\n<li>3 tablespoons Asian fish sauce (<em>nam pla<\/em>)<\/li>\n<li>\u00bd cup freshly squeezed lime juice<\/li>\n<li>1 14-ounce can unsweetened coconut milk<\/li>\n<li>3 tablespoons unsweetened grated coconut<\/li>\n<li>1 tablespoon cilantro, chopped<\/li>\n<li>1 tablespoon chopped Italian parsley<\/li>\n<li>2 tablespoons chopped scallions<\/li>\n<li>1\u00bd pounds tuna, cut in 1\/4-inch cubes<\/li>\n<li>Bag of baby lettuce<\/li>\n<li>8 cilantro sprigs for garnish<\/li>\n<\/ul>\n<h2>Instructions<\/h2>\n<ol>\n<li>In a bowl, combine all ingredients except the tuna, lettuce, and cilantro sprigs. Add the tuna and combine very gently\u2013do this step right before you are ready to serve. Marinate the tuna for no more than15 minutes\u2013do not over marinate!<\/li>\n<li>To serve, chill 8 martini glasses. Place baby lettuce in each glass up to the rim.
