Byron Bay Chilli Co hipped us to it and their <a href=\"https:\/\/www.byronbaychilli.com\/products\/\">Spicy Lemongrass Chilli Sauce<\/a> really sets it off.<\/p>\n<p><iframe loading=\"lazy\" title=\"Our Home\" width=\"750\" height=\"422\" src=\"https:\/\/www.youtube.com\/embed\/DiN88df-UGc?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture\" allowfullscreen><\/iframe><\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li>3 whole eggs<\/li>\n<li>3 egg yolks<\/li>\n<li>2 cups cream<\/li>\n<li>1 cup milk<\/li>\n<li>\u00bc cup caster sugar<\/li>\n<li>2 stalks lemongrass, crushed<\/li>\n<li>1 teaspoon vanilla<\/li>\n<li>\u00be cup light brown sugar<\/li>\n<li>3 mangoes<\/li>\n<li>\u00bc cup BBCC Spicy Lemongrass Chilli Sauce<\/li>\n<\/ul>\n<h2>Instructions<\/h2>\n<div class=\"jrListingFulltext \">\n<div class=\"jrFieldRow jrMakes\">\n<div class=\"jrFieldValue \">\n<div class=\"jrFieldRow jrCookinginstructions\">\n<ol>\n<li class=\"jrFieldValue \">In a bowl, whisk eggs and egg yolks together until well blended.<\/li>\n<li class=\"jrFieldValue \">Heat cream, milk, caster sugar and lemongrass in a heavy saucepan until nearly boiling.<\/li>\n<li class=\"jrFieldValue \">Gradually whisk cream mixture into eggs, then return to saucepan. Cook over medium-low heat, stirring constantly, until the custard coats the back of a spoon, about 3 minutes.<\/li>\n<li class=\"jrFieldValue \">Remove lemongrass and stir in vanilla. Pour custard into 6 ramekins and set in a baking pan.<\/li>\n<li class=\"jrFieldValue \">Place in a 160\u00b0C oven and pour hot water into outer pan halfway up the sides of the ramekins to create a water bath.<\/li>\n<li class=\"jrFieldValue \">Bake for 35 minutes or until centre of custard is set. Remove ramekins from pan and cool.<\/li>\n<li class=\"jrFieldValue \">Cover and chill. Several hours before serving, sift brown sugar evenly over the top of each custard, spreading to the edges.<\/li>\n<li class=\"jrFieldValue \">Set the ramekins under a hot oven grill and cook until browned, about 90 seconds. Watch carefully so that topping does not burn.<\/li>\n<li class=\"jrFieldValue \">Remove from grill and serve immediately or chill. Just before serving, cut mangoes in half to create 6 \u201ccheeks\u201d, leaving skin on and scoring the flesh into squares.<\/li>\n<li class=\"jrFieldValue \">Brush each cheek with chilli sauce and either sear face-down on a barbecue grill or cook under an oven grill just long enough to caramelize the chilli sauce. Serve alongside the brul\u00e9e.<\/li>\n<li>Place a piece of banana leaf on each dessert plate, set ramekin to one side and accompany with a grilled mango cheek that has been inverted to open up the squares of mango.
