But they are fun to cook on the spot too. <a href=\"https:\/\/www.byronbaychilli.com\/products\/\">Check out the full line of sauces and products here to get your fritters going<\/a>.<\/div>\n<\/div>\n<\/div>\n<div class=\"et_pb_module et_pb_text et_pb_text_0 et_pb_text_align_left et_pb_bg_layout_light\">\n<div class=\"et_pb_text_inner\">\n<h3><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-15279\" src=\"https:\/\/www.burn-blog.com\/wp-content\/uploads\/2021\/06\/ByronbayChilliCompany.Cornfritters-.jpg\" alt=\"byron bay chilli co fritters\" width=\"640\" height=\"543\" \/><\/h3>\n<h3>Chilli Corn Fritters with Prawn Tacos and Guacamole Ingredients<\/h3>\n<h4>Chilli-Corn Fritters<\/h4>\n<ul>\n<li>375g corn kernels<\/li>\n<li>2 eggs<\/li>\n<li>2 green onions, chopped<\/li>\n<li>1 clove garlic, minced<\/li>\n<li>2 Tbs fresh coriander, chopped<\/li>\n<li>2 tsp ground coriander<\/li>\n<li>2 tsp freshly ground pepper<\/li>\n<li>2 tsp sugar<\/li>\n<li>2 tsp salt<\/li>\n<li>1\/2 cup plain flour<\/li>\n<li>1\/2 cup polenta<\/li>\n<li>1\/2 tsp baking powder<\/li>\n<li>vegetable oil for frying<\/li>\n<li>BBCC Salsa Picante or Smoky Red Bean Salsa<\/li>\n<li>BBCC Green Jalapeno Chilli Sauce<\/li>\n<li>BBCC Fiery Coconut Chilli Sauce<\/li>\n<li>BBCC Smokin&#8217; Mango Chilli Sauce<\/li>\n<li>BBCC Spicy Sweet Chilli Sauce<\/li>\n<li>BBCC Heavenly Habanero Chilli Sauce<\/li>\n<li>BBCC Red Cayenne Chilli Sauce<\/li>\n<li>Sour cream<\/li>\n<\/ul>\n<h4>Prawn Tacos<\/h4>\n<ul>\n<li>12 large prawns, peeled and cleaned<\/li>\n<li>1\/2 cup vegetable oil<\/li>\n<li>1 each, yellow, red and green capsicum, thinly sliced<\/li>\n<li>3 cloves garlic, minced<\/li>\n<li>3 or 4 jalapeno chillies, finely chopped (optional for those that like it hot)<\/li>\n<li>12 corn tortillas, or small, fajita sized flour tortillas<\/li>\n<\/ul>\n<h4>Guacamole<\/h4>\n<ul>\n<li>2 or 3 ripe avocados<\/li>\n<li>Fresh lemon or lime juice<\/li>\n<li>BBCC Green Jalapeno Chilli Sauce<\/li>\n<li>Salt and pepper<\/li>\n<\/ul>\n<h3>Instructions<\/h3>\n<div class=\"jrFieldRow jrCookinginstructions\">\n<div class=\"jrFieldValue \">\n<div class=\"jrFieldRow jrCookinginstructions\">\n<div class=\"jrFieldValue \">\n<h4>Chilli-Corn Fritters<\/h4>\n<ol>\n<li>Place all the ingredients except the salsa, sour cream and vegetable oil in the bowl of a food processor and process until blended but still slightly lumpy\u2026don\u2019t over-process. Let stand for one hour at room temperature.<\/li>\n<li>On an oiled griddle or skillet, spoon 1\/4 cup of the mixture to form a small cake. Repeat until all the mixture is used.<\/li>\n<li>Cook on medium-high heat until browned on both sides.<\/li>\n<li>Serve warm with salsa and sour cream as a side dish for the tacos.<\/li>\n<li>Should make 12, small to medium sized fritters.<\/li>\n<\/ol>\n<h4>Prawn Tacos<\/h4>\n<ol>\n<li>Heat oil to medium-hot, add capsicum and garlic and cook for 2 minutes. Add the prawns and chillies, and cook until the prawns turn bright orange. Do not overcook.<\/li>\n<li>Spoon the mixture onto tortillas that have been warmed and slightly blackened on the grill. Add salsa or chilli sauce of your choice and fold or roll the tacos.<\/li>\n<\/ol>\n<h4>Guacamole<\/h4>\n<ol>\n<li>Cut the avos in half, remove the pips, spoon out the avocado and mash in a bowl with a fork.<\/li>\n<li>Add a few squirts of lemon or lime juice and salt\/pepper to taste. The BBCC GREEN JALAPENO CHILLI SAUCE can be added too, to make the perfect Guac.
