This is probably the favorite version, as described in John Lake\u2019s book, <em>The Culinary Heritage of Barbados<\/em>. Flying fish is sometimes found frozen in Florida markets; if it\u2019s not available, substitute any mild white fish, such as <a href=\"https:\/\/www.seafood-harvest.com\/?s=flounder\">flounder<\/a>.<\/p>\n<h2>Fried Flying Fish Ingredients<\/h2>\n<ul>\n<li>8 small flying fish fillets<\/li>\n<li>Bajan Seasoning as needed (see recipe)<\/li>\n<li>2 eggs, beaten<\/li>\n<li>Bread crumbs and flour, mixed<\/li>\n<li>1\/2 cup butter<\/li>\n<li>Lime slices and parsley for garnish<\/li>\n<li>Bajan hot sauce, such as Windmill or Lottie\u2019s<\/li>\n<\/ul>\n<h2><strong>Instructions<\/strong><\/h2>\n<ol>\n<li>Rub the fillets with the Bajan Seasoning, then dip them in the beaten eggs, then the bread crumbs and flour. Fry the fillets in the butter until lightly browned, turning once.<\/li>\n<li>Serve garnished with the lime slices and parsely.
