Chile powder can be substituted for the <a href=\"https:\/\/www.seafood-harvest.com\/index.php\/2021\/06\/14\/chile-grilled-scallops-with-coconut-mint-chutney\/\">fresh chiles<\/a> if they are not available, but the consistency of the sauce will be slightly different. Serve this with rice pilaf and a fruit salad.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-5992\" src=\"https:\/\/www.seafood-harvest.com\/wp-content\/uploads\/2020\/09\/Reeling-in-the-Years.jpg\" alt=\"reeling in the years\" width=\"500\" height=\"250\" srcset=\"https:\/\/www.seafood-harvest.com\/wp-content\/uploads\/2020\/09\/Reeling-in-the-Years.jpg 500w, https:\/\/www.seafood-harvest.com\/wp-content\/uploads\/2020\/09\/Reeling-in-the-Years-300x150.jpg 300w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/><\/p>\n<h3>Tiger Prawns with Red Chile Ingredients<\/h3>\n<ul>\n<li>3\/4 cup plus one tablespoon cornstarch<\/li>\n<li>2 egg whites<\/li>\n<li>2 teaspoons salt<\/li>\n<li>1 tablespoon dry sherry (or more if needed)<\/li>\n<li>1 pound prawns or large shrimp, peeled and deveined<\/li>\n<li>1 \u00bd cups vegetable oil<\/li>\n<li>1 teaspoon sesame oil<\/li>\n<li>1 medium onion, peeled and sliced<\/li>\n<li>1 tablespoon tomato paste<\/li>\n<li>Pinch of white pepper<\/li>\n<li>1 teaspoon sugar<\/li>\n<li>2 green onions, finely chopped<\/li>\n<li>1 teaspoon grated ginger<\/li>\n<li>4 jalape\u00f1os (red preferred), seeds and stems removed, minced<\/li>\n<li>1 tablespoon chicken stock<\/li>\n<\/ul>\n<h3>Instructions<\/h3>\n<ol>\n<li>In a bowl, combine the 3\/4 cup cornstarch, egg whites, 1 teaspoon salt, and the dry sherry and mix well to make a batter. Add the prawns to the batter and coat well.<\/li>\n<li>Heat the vegetable oil in a wok until hot. Add the coated prawns and stir fry for 2 minutes. Do not overcook. Remove the prawns and drain them on paper towels.<\/li>\n<li>Remove all but about 1 tablespoon of oil from the wok. Add the sesame oil. Reheat the wok and stir-fry the onion slices for 1 minute. Add the tomato paste, white pepper, remaining salt, and sugar. Add the reserved prawns, green onions, ginger, and jalape\u00f1os and stir fry for 1 minute.<\/li>\n<li>In a small bowl, combine the 1 tablespoon of cornstarch with the chicken stock and add to the wok to thicken the sauce.
