We enjoyed these unusual rellenos in a restaurant in Ticul set up behind the owner\u2019s home. Although this recipe calls for a mixture of seafood, a single ingredient such as <a href=\"https:\/\/www.seafood-harvest.com\/index.php\/2022\/02\/22\/spicy-coconut-shrimp-kabobs-with-cous-cous\/\">shrimp<\/a> works just as well.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-6226\" src=\"https:\/\/www.seafood-harvest.com\/wp-content\/uploads\/2020\/10\/Pescaos-y-Mariscos.jpg\" alt=\"mexican seafood\" width=\"500\" height=\"250\" srcset=\"https:\/\/www.seafood-harvest.com\/wp-content\/uploads\/2020\/10\/Pescaos-y-Mariscos.jpg 500w, https:\/\/www.seafood-harvest.com\/wp-content\/uploads\/2020\/10\/Pescaos-y-Mariscos-300x150.jpg 300w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/><\/p>\n<h3>Seafood Stuffed Chiles Rellenos Ingredients<\/h3>\n<ul>\n<li>1\/4 cup minced onion<\/li>\n<li>2 cloves garlic, minced<\/li>\n<li>2 fresh habanero chiles, stems and seeds removed, minced 1 tablespoon butter or margarine<\/li>\n<li>1 pound mixed cooked seafood, such as shrimp, scallops, and calamari, diced<\/li>\n<li>3 tablespoons chopped fresh cilantro<\/li>\n<li>1 teaspoon dried oregano, Mexican preferred<\/li>\n<li>1\/4 cup of your favorite tomato\/habanero based salsa<\/li>\n<li>4 fresh poblano chiles, roasted and peeled<\/li>\n<li>Flour for dredging<\/li>\n<li>3 eggs separated<\/li>\n<li>3 tablespoons flour<\/li>\n<li>1\/4 teaspoon salt<\/li>\n<li>Vegetable oil for frying<\/li>\n<li>Salsa de Jitomate Yucateca (recipe above)<\/li>\n<\/ul>\n<h3>Instructions<\/h3>\n<ol>\n<li>Saute the onion, garlic, and habanero in the butter until softened. Toss with the seafood, cilantro, oregano, and salsa.<\/li>\n<li>Make a slit in the side of each poblano chile, and stuff the chiles with the seafood mixture. Dredge the chiles with the flour.<br \/>\nBeat the egg whites until the form stiff peaks.<\/li>\n<li>Beat the yolks with 1 tablespoon water, flour, and salt until thick and creamy. Fold the yolks into the whites.<\/li>\n<li>Dip the chiles in the mixture until covered and then fry in 2 to 3-inches of oil until they are golden brown.
